I've been experimenting with different motors and propellers for my racing frame this year. I made the decision in November or December to fly high kv motors. Who doesn't want to fly faster?! They're just batteries, lots of dead batteries.
I made a discovery today and realized I've been using the wrong props for high KV motors for months! Lower pitched props like 5040 or 5046 handle better and are more responsive with 2600kv motors. If you're just after top speed and don't need to make tight turns then you may still want to stick with higher pitched props. Or, maybe you simply like the way higher pitch props fly. However, my preference is for better, more responsive handling. I think the top speed on 5040x3 and 5046x3 is still fast enough for most tracks!
I hope this information helps you if you're trying to pick a motor&prop combination for yourself on high KV motors.
